Újházy ChickenSoup



  • 1 whole hen (1 kg)
  • 200 gr mixed vegetables:
  • 40 gr celery
  • 50 gr kohlrabi
  • 40 gr onion
  • bunch of parsley
  • salt, black pepper, mushrooms
  • noodles


Wash the poultry well and place it in a pot with 2 liters cold water. When it stars to boil carefully remove the foam. Reduce heat and simmer for half an hour. Then add the vegetables and spices. When meat is cooked, remove it to a platter. Let the soup settle then drain it through cheese cloth or a fine sieve. Meanwhile boil small mushrooms, green peas in salt water. When they are cooked, remove and julienne half of the carrots, celery and parsley. (Use the other half for another dish.)

Prepare the vermicelli. Mix flour and eggs with a pinch of salt and just enough water to produce stiff dough. Roll the dough very thinly, let it dry slightly then cut it finely. Boil the noodles in salt water. Place the cut up meat in the soup plates, add noodles then add the hot soup. Sprinkle with finely chopped parsley.
