Breaded pancakes with a ham filling

       Ingredients:

  • 5 ozl 150 g ham on the bone

  • 2 1/2 tbsp/40 g butter

  • 5 tbsp flour    

  • 3/4 cup/200 ml milk 

  • salt    

  • pinch of pepper         

  • 1/2 tsp ground paprika

  • 8 unsweetened pancakes  

 

         For the coating:     

  • 3/4 cup/100 g flour

  • 3 cups/150 g fresh breadcrumbs

  • 2 eggs

  • 1 1/4 cups/300 ml oil for deep-frying

Grind the ham in a meat grinder. Melt the butter, and stir in the flour. Add the milk, and bring to the boil, stirring continuously, to make a thick sauce. Season with salt, pepper, and ground paprika, then stir in the ham. Spread the ham mixture over the pancakes, and fold each one into a square. Sift the flour and breadcrumbs onto separate plates. Beat the eggs in a deep bowl. Dip the folded pancake in the flour, then in the egg, and finally press both sides in the breadcrumbs. Cook in plenty of hot oil until golden on both sides.

Serve as an appetizer or as a snack, accompanied by seasoned mayonnaise .
